Tuscan Tuna and White Bean Salad

Olive Oil & Beyond, Newport Beach - Salad Inspiration Tuscan Tuna white bean salad


Tuscan Tuna and White Bean Salad Recipe

Serves 4

  • 2 6oz. cans of Italian tuna packed in olive oil
  • 2 jars of cannellini beans (use our “Tuscan White Bean Appetizer”)
  • 1/3 cup drained and rinsed small nonpareil capers
  • 4 tablespoons OO&B Barrel-Aged Red Wine Vinegar
  • 1 tablespoon freshly squeezed lemon juice
  • 5 tablespoons OO&B Pescarese Italy extra virgin olive oil
  • Sea salt and freshly cracked black pepper
  • 1 medium red onion, thinly sliced
  • 1 ½ cups cherry tomatoes
  • 2 cups fresh arugula or mixed field greens
  • 6-8 fresh basil leaves

In a large bowl add the tuna, draining the oil, and break it into bite-size chunks. Add the beans and the capers. Slice the red onion into thin strips and cut the cherry tomatoes in half. Add to the tuna mixture, along with sea salt and pepper to taste. Add the red wine vinegar and lemon juice, and add the extra virgin olive oil. Toss to coat and let the mixture sit for at least 30 minutes to allow the flavors to combine. When you are ready to serve, place the arugula or mixed greens in a large bowl and spoon the Tuna and Bean salad on top. Top with freshly torn basil leaves and serve immediately.
