Spicy, Sweet Mushrooms from the Olive Oil & Beyond Kitchen
Wash or brush mushrooms before cooking to remove any dirt or compost.
- 16 oz. sliced mushrooms
- 2 Tbsp butter
- 1- 2 Tbsp. OO&B Pepperoncini Organic Olive Oil
- 1 Tbsp. OO&B Cinnamon Pear Balsamic Vinegar
- 1 tsp of nutmeg
- 1/4 tsp pepper
Sauté until brown with crispy, sweet edges. Some chefs may not wish to sauté until crisp, but in this case we think it further enhances the peppery sweetness.
Most mushrooms are made up of a lot of water in their fresh state, so expect much shrinkage as they release moisture and absorb the flavors beautifully. The result is a unique, nicely spicy sweetness with likeness to a Marsala sauce but with a bit of a kick. NOTE: Adding our Pepperoncini Olive Oil to just about any dish will add a bit of a bit without detracting from the food or sauce’s core flavor.
These uniquely sweet and spicy sautéd mushrooms are nicely served as side to red meats, chicken or as a topping over polenta, wild rice or thick egg noodles. Should you wish to retain more sauce for your particular recipe… add a bit more of Olive Oil & Beyond‘s premium olive oil and /or butter.
Add them to an Alfredo cream sauce or gravy for a flair the will certainly delight the palate!
