Sunny Summer butternut squash recipe with orange lime glaze

Featured OO&B Ingredients:

Crushed Whole Fruit Blood Orange- Organic Olive Oil, Bergamot & Lime White Balsamic Vinegar

SUPER SUMMER SIDES – Sunny Butternut Squash

  • 4  Cups cubed fresh butternut squash
  • 2-3 Tbsp OO&B crushed whole fruit blood orange organic olive oil (enough to cover generously)
  • 1/3 cup orange juice  (fresh squeezed or prepared )
  • 1 Tbsp butter
  • 1-2  tsp OO&B  Bergamot & Lime White Balsamic Vinegar  (or SUBSTITUTE  2 tsp lime juice)
  • 1  Tbsp  finely chopped fresh parsley
  • 1  tsp  TAJIN®  Sprinkle to taste  (or SUBSTITUTE  1/2 tsp. chili pepper)
  • 1  Tbsp brown sugar

Toss the squash in OO&B Olive Oil.  Soften butter and blend with seasonings, parsley and juices. Place loosely in small roasting pan. Pour juice mixture over squash. Toss again.   Bake for 35- 40 minutes in preheated oven 400 degrees, turning over mid-way and mixing to ensure all pieces are well- basted and absorbing the delicious citrus blend.

Top or toss with a light sprinkling of brown sugar.   Add a dash of fresh parsley, chopped or sprigs and enjoy!
