Roasted Thyme Baby Carrots

  • 2 pounds Baby Carrots, washed
  • 1-1/2 Tablespoons Olive Oil (Herbs de Provence)
  • 1-1/2 Teaspoons fresh Thyme
  • 1-1/2 Tablespoons Butter
  • Sprinkling of Parmesan, Sea Salt and Pepper

Preheat oven to 350 f. Toss carrots oil and thyme in large bowl. Sprinkle generously with salt and pepper. Spread carrots in a single layer on rimmed baking sheet. Dot with butter. Roast until carrots are tender and browned, about 40 minutes. stirring occasionally. Top with a dusting of parmesan. Serve hot.

Great for Thanksgiving or anytime!
