Chicken with Olives & Lemon

This main course is a definite crowd pleaser and full of flavor. It makes for an easy dinner you can plan ahead and serve for your next holiday party. Enjoy!

OO&B Ingredients: Spanish Saffron; Preserved Lemons; Hojiblanca Spain EVOO; Green Olives & Lemon

Serves 4-6

Ingredients:

4 boneless, skinless chicken breasts

2 finely chopped yellow onions

2-4 minced garlic cloves

½ tsp. ginger

Pinch of saffron

2 Tbsp. Hojiblanca Spain extra virgin olive oil

½ cup dry white wine

1 cup halved green olives

2 ea. sliced lemons

Salt and pepper

3 Preserved Lemons, sliced

On low heat, add OO&B  Hojiblanca Spain Extra Virgin Olive Oil and sweat the onions with the garlic. Season the chicken breasts with salt, pepper, ginger, and saffron. Add the chicken and cook on each side until brown.

Add the white wine to deglaze the pan and pick up the brown bits, then add a handful of the green olives & lemon and the sliced preserved lemons. Cover and let reduce. Cook until tender.

Serve the chicken with the sauce and decorated with the olives and preserved lemons. Serve with white basmati rice that is finished with a dash of saffron.
