Healthy Golden Chickpea & Tomato Bites

Start 2016 with this healthy salad! This is a quick and easy salad that is full of protein, flavor, and gorgeous colors. Serve it with your favorite antipasti or as a side salad to your roasted chicken, fish, and more.

OO&B Ingredients: Ravece Italy EVOO, Reserve White Balsamic with Wild Pomegranate Balsamic Vinegar

Ingredients:

2 cans unsalted chickpeas, drained and rinsed

1 cup flat-leaf Italian parsley, finely chopped

2 small garlic cloves

1 large firm yellow tomato, seeded and finely chopped

¼ cup Reserve White balsamic with wild pomegranate balsamic vinegar

½ tsp. fresh dill, finely chopped

¾ cup Ravece Italy Extra Virgin Olive Oil

Freshly cracked black pepper

Baguette slices or crackers, to serve

Mix everything together in a large bowl, adjusting the seasonings to taste. Cover with plastic wrap and chill in the refrigerator for 1 hour.

Preheat oven to 400°F. To serve, slice baguette into ¾ inch slices on the diagonal. Drizzle lightly with extra virgin olive oil, place on a baking sheet and cook in oven until golden brown, about 8 minutes. Spoon the chilled bean-tomato mix on top of the baguette slices, let sit for 10 minutes and serve. Enjoy!
