OO&B Ingredients: Merlot Wine vinegar; Coratina Italy EVOO; Sulla Honey
Serves 4
Vinaigrette:
1/2 cup Merlot Wine Vinegar
1 cup Coratina Italy Extra Virgin Olive Oil
1 tbsp. Sulla Honey
2 tbsp. shallots, minced
Pinch of freshly ground black pepper
Salad:
5 cups Tuscan kale, freshly chopped
1 cup panchetta
Parmigiano Reggiano cheese to taste
In a small bowl, mix merlot wine vinegar and EVOO, Sulla honey, minced shallots, and ground pepper. Whisk until well mixed. Set aside.
In a pan on medium-low heat, fry your pancetta until crispy. Let cool and set aside.
In a large bowl, gently massage the kale and vinaigrette together until well coated. Toss in the crispy pancetta and shaved parmigiano reggiano
